La Manté

An artisan bakery & café, planned for Bengaluru, India

The idea

La Manté is a proposed bakery and café bringing European artisan pastry to India, centred on hand-laminated doughs such as croissants and viennoiserie, served alongside specialty coffee.

The business is currently in the planning stage and has not yet opened or been incorporated. We are researching locations, suppliers and the setup process in Bengaluru.

The name

La Manté takes its name from mantequilla, the Spanish word for butter. It reflects the heart of the planned bakery: high-quality, high-fat butter (at least 82% butterfat) worked through precise lamination to create crisp, flaky, distinctly layered pastry. The Spanish root is also a nod to where the story began, at culinary school in Barcelona.

Founder

Isaac Huffman is a pastry chef from Northville, Michigan, USA. He trained at culinary school in Barcelona and completed his internship at the Mandarin Oriental Barcelona, working in the kitchen of its Michelin-starred restaurant Moments and in the hotel's pastry section.
